$_SERVER['CONTENT_TYPE'] contains the content-type of the request, but this is not 
documented. I would expect it here: 
http://www.php.net/manual/en/reserved.variables.server.php

As the page you linked to says: "The entries in this array are created by the web server. There is no guarantee that every web server will provide any of these; servers may omit some, or provide others not listed here."

There is no guarantee that CONTENT_TYPE will be present in $_SERVER. It's not the case on Apache/2.2.14 (Ubuntu) for instance.
