Time  - 23:57 ( time zone - Asia\Tel_Aviv )
the given output for date("H:i:s") -> 00:57

Note - 
the time zone on the server was UTC + 2:00 Jerusalem

Test script:

echo date("H:i:s");

echo time(), "\n";
echo date_default_timezone_get(), "\n";
echo date(DateTime::ISO8601);
