1. Initially, configure was not passed --statedir. Then php was built.
2. FPM wrote logs as expected in $prefix/var/log.
3. As a preference, logs should be in /var/log, so php was reconfigured with --statedir=/var then rebuilt.
4. The defaults written in php-fpm.conf.defaults automatically reflected /var.
5. Starting php-fpm service triggers an error as it still looking at $prefix/var/log

workaround: 
a. make clean
or
b. manually override all conf that relies on statedir

Expected result:
----------------
php-fpm should start normally and use the reconfigured statedir

make clean should not be required

Actual result:
--------------
php-fpm did not start as it still looks in default derived statedir
