The man mage recommends using the shared library for opcache, but when building from source, the extension doesn't seem to be built, and there are no instructions on how to build it.

Sorry, I was too fast here.  This has been filed as doc bug, so
the PHP version is actually irrelevant.

However, if you pass --enable-opcache to configure, the module
*is* supposed to be built.  Didn't you see any issues reported
(also check config.log)?
