date_default_timezone_set (and the rest of php documentation) do not provide a listing of valid PHP timezones.

A list, or link to a list, would be very useful in choosing the correct timezone rather than guess and check as is currently required (or read the source code).

Additionally there should be some clarification on conflicting timezones, such as EST.

Actually, there is code that returns a list of supported timezones. We can not really document this as this list gets extended once in a while. This new function (timezone_identifiers_list) is however not enabled yet, but will be in PHP 5.1.1 and higher. For now you can check on this url which ones are supported:
