php interactive mode is just not responding.

Interactive shell is only available if you have compiled PHP with --with-readline. Otherwise it's the "old skool" version (ie. no shell, <?php and ?>)

ok, I installed the snapshot quickly to check and report another bug.

Now I want to uninstall this /local/ installation of php, to let the main packaged be used instead. (Please don't tell me to change my PATH).

No "make uninstall" target is available. Another issue.
