after a file has been uploaded from an HTML form, extra header and mime type information is added to the files, anything from \n\r to a complete line of text. Most file types are not recognized by applications. This problem is documented by a few people in the user comments of the file handling documentation.

Let me guess: You're using the RPMs that came with RH?
Try updating. And if that doesn't help, get latest CVS snapshot from http://snaps.php.net as this has been fixed.
